Cleansing Watermelon Gazpacho (Beauty-Food Recipe)
I love, love, love all things watermelon. I could it eat it all day long, include it in soups, smoothies, and cocktails. Whenever I go to a cocktail bar in Manhattan, if there is a watermelon cocktail on the menu, I’m on it.
I love watermelon so much that we even created a cleansing oil dedicated to Kalahari Melon, a wild watermelon seed that grows mainly in Namibia and Botswana. Its pore-loving benefits are juicy: the vitamin F removes excess sebum, while the omega-6 and omega-9 fatty acids stimulate skin cell growth.
Watermelon is a wonder-food that is sweet, refreshing, and surprisingly low in calories. With 90% water content, you are basically eating your water; it provides hydration, contains essential nutrients and vitamins, and also has lycopene, a powerful antioxidant that makes watermelons a cheerful red color!
I miss watermelon in the colder months, so when I began my Fall Reset plan, I knew I needed to dedicate the first dinner to this wonder-food as a “so long summer!” dedication.
This recipe is an adaptation on the Watermelon Gazpacho that I discovered at the American Flatbread Restaurant in Middlebury, VT.
I asked the waitress for the recipe, and Samantha, the Chef de Cuisine, kindly emailed her recipe to me! Her version was more chef-sophisticated so I’ve simplified it for my busy-mom-New Yorker lifestyle and for YOU. 😘
