Pretty Pomegranate Salad (Beauty-Food Recipe)
My partner and I hosted a little gathering over Memorial Day Weekend for a good friend and his date before heading to a New York Phil concert dedicated to Ukraine at St. John the Divine (the world’s largest cathedral!)
For this occasion, I made this bright and happy salad, inspired by our recent trip to Jordan where pomegranates were abundant in so many of the dishes. Besides being loaded with skin-loving antioxidants, it makes any dish pretty on the eyes!
Paired with vitamin E from pine nuts and fatty acids from green olives (a favorite is the Castelvetrano olive), this is a skin superfood salad!
My formula for all salads is handfuls of a variety of lettuce and then layering four parts of different superfood ingredients on top (like the pomegranate-pine nuts-olive-cheese quartet, pictured above) before mixing with salad dressing.
Savor Secret: A small drizzle of pomegranate molasses gives this superfood salad a “je ne sais quoi” good-for-glow twist!
Yield: 4 servings
Time: 5 minutes
Ingredients:
Handful of arugula
Handful of spinach
Fistful of watercress
¼ cup mint, chopped
⅓ cup pine nuts
⅓ cup olives (I like Castelvetrano), chopped
⅓ cup pomegranate
⅓ cup parmesan cheese
Drizzle of pomegranate molasses
Directions:
Place the lettuce into a big bowl.
Layer the olives, almonds, pomegranate seeds, and cheese on top in equal parts.
Drizzle the pomegranate molasses on top
Add salad dressing of choice; mix well so that the dressing lightly kisses each ingredient!
Serve and savor
