Lovely Lentil Soup (Beauty-Food Recipe)
I learned to make this for my partner during Ramadan, and it’s become a family favorite. Even my daughter requests I make it for her (and she never asks me to make anything healthy!)
Think of this as your Vitamin B powerhouse soup for energy-and-glow-boosting benefits.
Lentils are packed with skin-loving benefits. According to MindBodyGreen, lentils are “a great source of B vitamins, including vitamin B7, also known as biotin”, which is essential for healthy skin.
The secret to this soup is not to be shy about the cumin, the crunchy topping, and loads of lemon love. The tangy taste gives the lentils a brightness to be loved by all.
LOVELY LENTIL SOUP RECIPE
Yield: 4-6 servings
Time: 45 minutes
Ingredients:
For crunchy topping (optional):
Drizzle olive oil
1/2 cup soup noodles
1 small onion, chopped
For soup:
3 tablespoons olive oil
3-4 garlic cloves, minced
1 cup red lentils | vitamin B for skin glow
1 T tomato paste
1 T ground cumin | antibacterial for clear skin
Salt and pepper to taste
1-quart chicken or vegetable broth
1 cube chicken or vegetable bouillon
Juice of 1-2 lemons | detoxes body for skin hydration
Directions:
Prepare the topping by sautéing 1/2 of the chopped onion and ¼ of the crunchy noodles in light olive oil until onions are medium soft. Set aside.
In a large soup pot, heat 3 tablespoons oil over high heat. Add other half of chopped onion and minced garlic; sauté until golden, about 4 minutes.
Stir in red lentils, sauté until soft, about 2 minutes. Add in tomato paste, cumin, salt, black pepper, and sauté for 2 minutes longer.
Add broth. Bring to a boil, then partially cover pot and turn heat to medium-low. Add soup noodles.
Add bouillon, salt and pepper to taste.
Using an immersion blender, purée the soup until somewhat chunky.
Squeeze juice of 2 lemons into soup.
Serve soup with prepared crunchy topping. You can also throw some parsley on top if you have some for a pretty presentation!
